Steel Cut Oatmeal
This dish takes a little time investment, but it’s a great way to mix it up on the weekends.
Bring 1 1/2 cups water to a boil
Add 1/3 cup steel cut oats
Simmer 25-30 minutes stirring occasionally
Transfer to a cereal bowl and add a splash of almond or soy milk
Top with fresh fruit – blueberries, raspberries, blackberries, peaches
Sit down and enjoy!
Alternative method – Combine water, oats and cinnamon in Instant Pot pressure cooker. Add 1/2 cup frozen peaches or chopped apple. Cook on high for 15 minutes.
