Green Peanut Butter Milkshake
I know this sounds bizarre, but it’s a scrumptious concoction that I created to satisfy the sweet tooth and get some extra greens in on those days when I might not have done as much as I would have liked!
In a high speed blender:
generous handful of spinach
1 banana
1 cup soy milk (any plant milk will do)
2 Tbsp peanut butter
4-6 walnuts
1 tsp cinnamon
flax seed, hemp seed, chia seed will pack a superfood punch
Optional – 2 Tbsp hemp protein powder
Fruity Fresh Ice Cream
Blend everything to a smooth liquid, then add 1 1/2 – 2 cups ice and blend again. Add more ice to make it thicker like soft-serve, less to make it like a milkshake. If you go too far one way or the other, just add more ice or milk to adjust.
This one defies all the odds. Don’t get me wrong – I love eating veggies and I consider them delicious. But it’s a stretch to consider them desert, isn’t it? Not anymore!
1 cup spinach
1/2 orange
1 1/2 bananas (frozen)
1/2 avocado
chopped walnuts
In a high speed blender, combine spinach and orange. Blend to pulverize the spinach to a smooth consistency. Add the bananas and avocado. Blend on high for 20-30 seconds, using tamper to press ingredients into blade. Contents should be about the consistency of soft serve ice cream. Spoon into a bowl, top with chopped walnuts to get some good omega-3’s in your desert. Enjoy!
